These things are pointles without context.
If the enemies you are fighting have 6 or less hit points the knuckles for instance will be strictly better. If they have hundreds of hit points the knife ends up being better.

Dragon essentially has a 2.5% chance to kill instantly (do 300 damage, essentially) and a 7.5% chance to do 90 damage, an average dmg/round of 14.25, or average of 21.1 rounds to kill
Knight has a 33% chance to do 180 damage and a 67% chance to do 20 damage, an average of 72.8 dmg/round, or 20.6 rounds to kill.
Realistically the fight will basically come down to if the dragon's insta-kill procs before the knight's average kill time of 20.6 turns, the probability of which is is 1 - (.975^20.6), or 40.63%. So the knight basically has a 60/40 chance of winning.

For those that can't do simple math it's a 2.5% chance for the human to instantly die whenever dragon attacks.

The sooner I shave health off them, the less damage they can deal to my base, so I increase longevity. 20 damage vs 45 damage doesn't matter since each squad has 10 health. And the sooner I have people dealing with them the sooner they have to split focus. All signs point to standard units.

Knife for PVP Brass Knuckles for PVE
Not worth it. Duel wielding is only effective for having two of either. Their attack animations don't flow into each other so having one of each cuts down your attack speed.
There IS an exploit to have both in the same hand and if you can hit drop weapon at just the right moments after attacking with the knife you can get a quick double attack, but this only help against enemies you can 2-shot.

If a knife just barely hits it can do a little scratch, but if the knuckles just barley hit it's considered a miss because it won't have the force to do damage.
Damage in Morrowind isn't random though, retard. You deal minimum damage when you click the button and you deal more damage the longer the button is held, maxing out at the maximum weapon damage range.
So if you tap the attack button with a warhammer, you deal 1 damage. If you hold it down fully, you deal 80 damage (assuming it's a Daedric warhammer). That is of course not counting other damage bonuses like strength and such.

You could easily say that a minor cut with a knife would be the "1 damage" result, while you would need to connect with some force to meaningfully do anything with the brass knuckles. That's why the knuckles deal 6 damage minimum. However, in that situation, the brass knuckles should have a lower accuracy to represent that, since the graze of the knife doesn't need to have the full force behind it for the minor cut.
Brass knuckles, because both do the same damage (10 average on both, 10% 2x crit adds 1 average damage, 5% 3x crit adds one average damage) but brass knuckles both give you more health overall and completely eliminate the probability of a max damage range crit insta-killing you.
