A better question: is Ganondorf evil because he legitimately enjoys it or because the evil power within him practically forces him into accepting it and turning evil? What if one day he reincarnated and simply decided he didn't want to evil?
Ganondorf suffered from depression and Hyrule didn't have the facilitates to help him so he lashed out. It's very tragic.

If you played SS you would know he is literally demise incarnate. He doesn't have a choice. He isn't like some normal guy whose body is infested with evil, he IS evil. That's just the form he's taken.

You forgot there was some big invisible evil thing in the well, that later escapes.
I think it would be a really interesting story to make. A reincarnation where just this once he did not want to be the bad guy, but the strings of fate keeps pushing him in that direction. Him, Link, and Zelda actually being total bros together while having to save Ganon from his own fate.

Most (if not all) of the troubles people have in Zelda games can be traced back to him and his lust for power.

There's a theory from TVTropes that suggests that Ganon is the reincarnation or Goose Soul and Demise's hatred. They use the logic that for some reason it's never made clear, Impa was also forced to reincarnate to but she wasn't apart of the direct curse of demise. so it's possible the curse effected Groose as well.
I'd like a Zelda game where Link and Ganondorf grow up as bros, only for Ganondorf to betray him once they both reach the triforce.

I had the idea, based on the TVtropes theory I posted about, of having the interlopers war (the one referenced in twilight princess) be revealed to be caused by Groose's reincarnation before Ganon being influenced by Demise's hated. Ending with Link having to battle his friend to the death.
Legend of Zelda NES: Ganon releases monsters on the countryside, killing countless civilians and uses black magic to attempt to topple the beloved rulers
Link to the Past: Ganon kidnaps several innocent women and murders a lot of people, uses black magic to mind control many guards and has them kill anybody who opposes him
Ocarina of Time: Ganon unleashes monsters, particularly zombies, to pretty much wipe out the entire population of the kingdom in a genocide, forcing the survivors to evacuate to some shitty village
Wind Waker: Ganon kidnaps a large number of children and unleashes monsters on the countryside. This Ganon actually doesn't do as much evil as normal
Twilight Princess: Destroys multiple kingdoms, releases monsters on the countryside
Breath of the Wild: Possibly the most evil ganon to date. He's literally an incarnation of evil, known as a natural disaster. He lays waste to a massive civilization and destroys entire towns. It's implied that he killed countless civilians. Survivors are forced to go into hiding in the few secluded villages that survived his rampage
Ganon's victims aren't rubbed in your face so much because Zelda is mostly a game series for kids and they don't want to have graphic deaths and lots of tragedy, but pretty much every appearance he destroys an entire civilization with violence.

That would be really lazy. Ganondorf is the desert bandit warlord archetype, not really fit for a rivalry-turned-hostility story with a Hylian hailing from a peaceful forested village. If they were to ever go down that path I'd rather it be a new villain who was made for the role. Of course knowing Nintendo it would then turn out that he was controlled by Ganon all along who will then go over to be the true final boss again.

Those are the main antagonists, and their death is an important plot point.
I mean that they're not going to talk a lot about some random background people dying or show a lot of humans dying. Hell, in Breath of the Wild if you encounter a traveler being attacked by monsters they can't even die, they just get knocked out.
Zelda series is extremely squeamish about having humans die with the exception of the main bad guys who get their big epic death scene and the occasional "soldier gives a message with his dying breath" trope
I'm just playing by Nintendo's rules, but I'd love a new main villain with even a little substance and context to them.

Yeah imo they've regressed with breath, the one normal human boss dies humorously, the other are said to be "mindless beast"™ (the blight and Ganon) or machines.
Still super disappointed they didn't give us any hint at the human Ganondorf in terms of characterization especially after Wind Waker and Twilight Princess showing two very strong but different paths Ganondorf could take personality wise.

Nah just really kind of "Ganondorf's asshole-ishness is always told but not shown" and now that we've literally been told in Skyward sword that he's just following some destiny of an ancient demon's curse. It kind of calls into question how much is Ganondorf as a person and how much is it Demise's influence?
After establishing in the last game he's a puppet to some curse of some demon. It's like the opposite of Bowser/King Koopa, Starts off as this irredeemable princess stealing monster but over the last 35 years we've seen him go into an actually rather complex character who isn't clearly all bad. With Wind Waker they seemed to be taking that road for the most part with Ganondorf but over the last 10 years it's felt like the "let's shit on that" train with the "A GOD AM I" Twilight Princess Ganondorf, then "My hatred is never ending" Demise reveal and finally "Hey he's an asshole who wiped out Hyrule and doesn't even speak anymore " Calamity Ganon.
If you put toast in a toaster it would still get toasted.

I'd rather Ganon be like a mentor or something. It would be weird for them to be the same age. Have him truly be a good guy who cares for his people and Link but the lust for power overtakes him at some point. Sure, it'd be cliche, but I'd play it just to see a different side to Ganon.
It wouldn't really work because everybody would know from the second that they meet him that he will turn evil. It wouldn't work as a twist if you know what the twist is from the second you start the game
Mate, remember Hyrule Town? He killed everyone and raised them as zombies. He imprisoned the entire Goron population. He froze the Zora. He unleashed monsters into the forest. He built a giant tower without planning permission.

Which is why Skull kid/majora's mask is so much better of a villian, you constantly see the actual negative impact they made on the world and other characters.
