In order to hit max stats in most Disgaea games, you'll eventually have to grind super powerful items. Not only could this take awhile, but you're also subject to various forms of RNG to reach the max since there's only so many floors you can dive in an item. There were ways around this but it was tedious. Cue D5 where evilities get fleshed out even further, meaning you no longer need max stats to beat the hardest levels, nor do you need max items to hit your stat "softcap". On top of items no longer being as important to stat caps as previous games, the item world was also redone so that you can dive floors infinitely until you max out your item.

Disgaea is still a pretty low-budget series. They simply don't have the dosh to fill all the positions with great VAs even for the original dub.

I see. I'm pretty sure I've hit the reincarnation cap before but I never bothered with level 200 items because of the days of SRing needed to get that level within 100 floors.
I also never bothered with capping resident levels. Does that matter and/or become easier later on as well?

Capping residents(Innocents in later games) isn't as important in D5 as it used to be, but you do still want statisticians and stuff like that. However, you won't need to cap stat residents like you would in previous games, so in that sense it's much easier now.

Disgaea 5 is a great entry point because it's probably the most accessible game in the series. And these games all have self-contained stories so no worries about missing plot beyond a few nods to other games, as far as the main story goes. The Switch version is great since it's just the PS4 version with all the DLC included (basically extra characters, some being very useful, and silly cameo fanservice story for some of them).

If you like the idea of a Tactical RPG where your end goal is "make myself as broken as possible by messing with a variety of mechanics", go for it. Disgaea 5 is honestly one of my favourite games.
