Take your time, champ. Have him fight you on your terms. He makes stupid decisions if you notice how easy his attack are to dodge from behind him. The worst and only attacks he can trip you up with from behind him is that like overhead Ness yo-yo up-smash thing and those pink flesh grenades. What exactly is catching you?

I've been able to consistently get him to phase 2, but his pink projectiles seem to fuck me up 50% of the time even when I dodge and sometimes his careening around the arena in phase 2 kills me in half a second

Fight him in the water. Use your reflexes. Bloodborne really turned around the Souls concept of turtling because some bosses are fast as fuck, but orphan takes it up a notch.

I wouldn't do that. You might not think it, but this boss actually has a few audio cues. Namely the screech that signals the lightning attack.
My advice is to lead him into the water, and try to take the fight slow and steady. Lots of BB encounters force you to be aggressive, but this fight is an exception. Keep an eye out for when you stumble him, you can get a couple more hits in then.

If some faggot can beat him WITH A FUCKING TORCH than you can beat him with quality gear.

That's exactly me, except not with Bloodborne.
I have never beat Nito with cheesing and it makes me feel ashamed. He's not even one of the harder bosses in the series, but for some reason Nito has me hard triggered.

Beast Blood Pellets can be incredibly helpful, from what I recall, can cut the fight almost in half

Stop being a pussy and just kick his ass. That's literally how every boss in Bloodborne works. If you act like a scared bitch you will die, you have to be the one attacking.
