A/O is the accept button. Your finger is always on it.
B/X is cancel button. You can easily roll your finger there.
X/Δ is view/info button. You need more info to confirm something, so it's comfortable to use together with A/O as middle of your thumb rests on it when you reach for top button.
Y/□ is options button. You have to reach for it, but not as much as you need for start/select.

As someone that plays mostly Nintendo games, the Xbox layout makes the most sense. The letters flow from A to B and X to Y, X is on the X axis and Y is on the Y axis, A is green (Accept) and B is red (Back).
Primary Buttons: AB (and later c in various form such as the c-stick)
Secondary Buttons: XY (and later z as the trigger buttons)

Best solution honestly. on the switch when ever its letter prompts i will sometimes fuck it up until i memorize. but when it uses position prompts i never have an issue. i own all 3 consoles and a PC and this is by far my favorite and what i wish every game had

You can already use the Wii U GC controller adapter with the Switch.
It lacks a bunch of buttons (ZL, -, Home, Screenshot plus the clickable sticks), but for games that don't need those extra buttons like Mario Kart it works great.

The GC controller works great with Mario Kart, but not so great with Odyssey. The fact that you can't remap buttons is such a shitty thing that Nintendo sadly refuse to remedy.
The L/R buttons on the GC are automatically mapped to L/R on the Switch, which are both used to center the camera. In order to crouch/long jump/ground pound you'll have to press the Z button and that feels awkward.
There's also the fact that the GC has no clickable joysticks, so you can't go into first-person. I don't get why they had to map that shit to a stick button, but have every other action mapped to multiple buttons.
