As technology advanced, swords got bigger and bigger. Just before swords went out of fashion because of guns in the 16th century, they were massive and bigger than a person (look up "montante").
If we were still using swords today, they would be Monster Hunter sized.

Katanas were wielded by two hands. Full plate armor at its peak was designed to deflect slashing blows without encumbering its wearer. Katanas were useful to cut off peasant limbs, nothing more.

Katanas aren't good for striking against other swords, training with the katana consists of mainly dodging the enemies attacks and using the long reach of the sword to cut at the weak points the opponents armor.
Also the reason the metal was folded 100 times over was because the metal they had wasn't as strong on it's own.

Depending on the place and time the fighting was done mostly by peasants (sengoku, some wars before XIV europe) with little to no instruction on how to fight. A spear is much easier to use en masse and needs no technique or education to be used effectively, contrary to a sword.

They're not as heavy as you think. My longsword is an unsharpened replica I use for training and it's only 1.6kg of weight.

Zweihander would weigh around 3-4kg for actual battle use and while you're gonna get tired of swinging real soon, it's not that difficult.

Thats not how it happened. Guns began to replace bowmen, but even then it took a while because for a while, Longbowmen could shoot more accurately and faster at distance. Swords were always in the minority anyway at least during the medeival period, Pikemen/spearmen were the most common infantry unit. You could make pikes purely out of wooden sticks, and arm barely trained peasants with them and they'd still be deadly to a cavalry charge,

Most of what he does in that particular video is pretty bad. The sword itself needs to be reworked to reduce the weight, and the dude needs to bulk up and get some strength through his entire body.

you also have to consider the fact that swords were not the primary weapon in battle, sword was a secondary weapons, have fun trying to pierce a plate armor but hitting it with a blade.

A steel sword doesn't really weigh very much you know. You're pretty much looking at around three pounds on average.
