The first thing to do is install MacType. This will make your fonts look a lot better.
Then you can play around with the classic theme and change the background and fonts and end up getting something fairly different from the typical look.
Any other options generally act very glitchy.
I have overly riced in this image, this is not my typical theme.

The best ricing you can do is keeping everything tidy and organized plus some optimizations (use autoruns to check startup programs, clean shit you don't need with ccleaner, edit registry keys, etc)
