And why would you want everything to be built as both x86_64 and x86? There is zero point.

That's not what it does. It just creates an additional 32-bit ABI for packages that support it.

why wouldn't I use grub?

You also need to install the other versions of font packages that infinality had replaced.
It should even tell you what they are exactly in the error message.
I think it's fontconfig and if you use multilib, then also all the lib32 versions
