Because scientists and hackers are smart, therefore they don't find it difficult to install an obviously superior system.

They use Kali Linux, Parrot OS, and maybe FreeBSD or OpenBSD. Sometimes on a portable bootable media (such as a USB flash storage device), along with an OOTB GNU or BSD OS for their desktop computer.

Top-tier scientists likely choose the Fedora Scientific spin or, on a vast majority, macOS because it's easy to use, has the native Office suite and because it's not as garbage as Windows. However, I know a based university teacher who uses Linux Mint with Xfce and LaTeX.

High-IQ teenagers without the opportunity of a formal introduction (because high-IQ teenagers significantly fail to get mandatory diplomas) use Archlinux to learn how computers work because the OS fades in the background to the benefits of the pure Unix learning curve, meaning Vim, BASH, and a simple package manager; and because it has an excellent wiki.

Some advanced said Archlinux users go to some BSD (likely FreeBSD for its god-tiers documentation) and live the Unix paradise with god-tiers file systems and top-tiers package managers, while some other go to an OOTB OS and are just satisfied of its functionalities (Linux Mint, Solus Project, Qubes OS if they feel nerdy), then maybe acknowledge that the most massive barrier to the adoption of OOTB GNU/Linux is the barrier of language and start, or get involved in, local documentations and communities of their OS of choice.

A few reasons, mostly because we dont like bloat.
Also another major reason is we like things a certain way and you cant get that in an off the shelf distro, so therefore everything is bloat until its either removed, the configs are redone, or the shit that wont even come in ubunto is installed anyway.

Also the less stuff that comes in a distro, the less likely its infected right out of the box.

lightdm can load whatever de/wm you have. Replacing unity is a walk in the park.
