Maybe, was Catalan written like Occitan before ? It wouldn't surprise me, Occitan has been written and kinda standardized for centuries, since it used to be a very important language of arts and commerce

Probably not identically, but it's possible that it was more similar (well, they were more similar in every aspect).

The first written documents of distinguishable Catalan are from about the IX century. It was likely indistinguishable from other Occitan dialects, tho. So we can consider both the same language at this period.

There already was a "right" way to write it in medieval times, but it was not properly studied and normativized until the end of the XIX.
A very common change to notice is the simplification of "ch", converting it to simply "c". (With the sound of "k").
Many people still have Catalan surnames with such sound written in the old way (March, Domènech, Bosch, Antich, Amich...).
I haven't done enough research on the differences between Occitan and Catalan, to be honest. I would like to provide good examples of what we are saying.

I think that we might need a new revision of written Catalan, tho.
For example, take the Catalan "on" with it's translation to Occitan "ont". In some Catalan variants, people pronounce something much more similar to "ont" than "on".
