When I was still with my parents I put them on ubuntu, it saved me a lot of pain. I know for sure with firefox and chrome, you can actually write-protect the extensions folder, using windows file manager or linux file manager. Then they can't install anything. I also banned google ads and other ad domain networks on the router level
it's sad because even on linux you can get these hijack/scam extensions and still have to deal with retarded relatives. This right here, is why firefox/chrome had to in so many ways disable extensions or make everything about them worse, stupid people rule the tech industry since we bow to their shitty needs instead of just forcing them to learn
