rx 480 is fine for 1080p gaming

can cheap it up with the 7600k if you want

Why you dont go with the 3200 MHz ram its like 5$ more

meh get exactly everything on pic related and you're golden. You could replace 7600K w/ 7700K, for 3200MHZ RAM get Ripjaws V CL15

psu is already seasonic, you could get a ss and make it platinum. Good PSU is the most important component and you can move it to your next build.

I'm going to passthrough the GPU to a VM via vfio, that's what I need a second monitor and i7 for. I have a 1440p monitor already, that's wht the 1070 for and the Zotac mini is the cheapest 1070 I can get in Germany.
