This is the aesthetic that comes to my mind when I think of the 2000's.

I think 10.8 was the best combination of looks and functionality. 10.9 started to get that ugly flat shit on some of the UI and 10.7 wasn't as feature-rich. I might reinstall it on my 2011 MBP because of the speed and battery life I would get.

Yosemite is easily the most aesthetic OS X version. Everything else ranges from mediocre to trash.
