I've got a dual 1.1GHz PIII / 2GB system under my desk here. Haven't touched it in a while though.
My main computer still is a PIII 500 mhz with 384 mb of ram and a fx5500(256mb).

not really, there have always been problems mainly in the sciences and engineering that dealt with values beyond the limited range representable by 32 bits and datasets that generally required far higher memory capacity than that offered by limited 32-bit addressing
there's a reason the high end jumped to 64-bit as soon as it was available in the early '90s, there's more to computing than the small problems you solve at home, and the less cycles you have to waste fetching from and storing in memory/the more data you can access from large memories instead of slow ass spinning rust, flash and network resources, the better

All I can tell you is to keep on checking eBay for a cheap 440GX board if it shows up, Xeon boxes, especially desktops were rare as shit and ultra-expensive. I've seen exactly one slot Xeon workstation in my lifetime.

I run 2K on dual PIII Xeon 500s and it's pretty good, the PII Xeon is balls deep in NT4 territory though, and it would fly with that OS too.

Hoping to get a t9600 or Q9100 and stick it in this laptop if it'd be compatible and maybe add some more ram. It'd breath new life into this almost dead POS.
It also needs a new battery and something to dissipate more heat but the performance is the biggest issue.
