You can't if you have the first or second gen.
For the 2006 models it's something about having a 32 bit EFI, which 10.7 is the last that will support it.
The 2008 models cant update past 10.11 because apple wants you to buy a new computer.

Pretty sure you can install latest macOS on 2010+ models. I have a Hackintosh Sierra running on Xeon X5650.

SSE4.1 is required in Sierra (for no good reason) but I saw something about getting it to work with LGA775/ SSE4.1-less CPUs.

A couple of simple patches will have your 10-year old Mac running on Sierra just fine.
Of course, some features that rely on newer hardware won't work but you can't have everything.
