I'm talking 7zip everything, with par2 for data integrity. i would convert a shitload of movies to x265 hevc 480p, which is still watchable at 200mb/hr, convert all my music to mp3 and put it in 7zip, install ganoo lincucks for more space saving; and download every package i need to create software for shit thats missing. in addition, make sure i have a comfy text editor for writing my memoirs.

an assortment of manga, light novels, anime, tv, movies. videos reencoded to low res x265, 7z the rest. probably 200GB+
maybe download several GB of some podcasts and youtube content I haven't seen
as for specific software I probably wouldn't install anything beyond 7z, potplayer, foobar2000, emulators
would probably dualboot debian and windows and bring installer isos for both and drivers for windows just in case

very low quality TV shows, find as low as I can, 480p or something, so an episode is 100-200mb max. stuff that I havent seen yet like Battlestar Galactica, the newer Stargates. A few of my favorite movies, in 700mb-1.5gb DVD rips, just to rewatch when im really bored.

Football Manager on Steam, about 1gb + 10gb of addons like club logos, facepacks etc. for immersion. I play that game for 8 hours a day easily if I have the time.

Fill the rest with scans of manga, comics and .pdf's of books. You can fit thousands on there.

Probably make it trough 2 years with stuff to spare.

First, I would take a macbook with me... and I would it keep it stock in fear of ruining perfection.

If I had a 1tb HDD I would fill it with books, comics and, of course, a shitload of porn.
But with only 320gb, I guess I would make do with only books and porn.
