if they don't know what you're getting there is no proof of crime

Private Trackers aren't private as in privacy. Your ISP still knows everything you're downloading.

your isp knows that you have torrent traffic, they don't know what specifically you are downloading

No, they don't.
I force encryption in my client, use HTTPS trackers and browse the private tracker using HTTPS.
They can see bittorrent traffic and the website I visited, that's it.

At the moment a VPN is the most beginner friendly and foolproof method for torrenting anonymously, if you know what you're doing you should be fine

can't you simply mask your ip when torrenting then? I know the answer is 'not really' or no one would use a seedbox and/or VPN for torrenting, but I would like someone to elaborate on this.

Also, my ISP blocks port forwarding and yet I can torrent at 90% of my bandwidth or so anyway, how's that possible? How does it work?

IP is an integral part of digital communicating. Data can not be transmitted across a network without knowing where it has to go

Think of the internet as a postal system. When you request a webpage, you write a letter to that domain telling them what you want and include your IP address as your return address. Without that, the server has no way to get back to you.

IP address = street address
ISP = town post office
Internet = global postal system
Packet = letter
VPN = That friend in another country that forwards your mail

seedbox hosted in secure euro location, then ftp with some sort of secure protocol such as TLS. pretty good.

ISPs send the warnings but they aren't the ones monitoring for them. It's going to be the copyright holder finding your IP in a list of seeders and reporting it to the ISP.
