I've got a good bit of experience with Ubuntu server and the default AWS AMI.

You should be able to install arch fine. Antergos is slightly more bloated though incredibly simple.

I installed arch once. It took me forever to get the boot loader installed. I finally found some setting in BIOS I needed to change. I'll post my step by step since I've got nothing better to do.

Well, Debian is my main, but it's a bit of a "boring" distro (doesn't have any unique features, but that's why I like it.) If you want something different, I'd go with Antix!
