My text editor runs in a terminal. I use that quite a lot.

The repls I use run in a terminal (python, lua).

I like to use ranger, a console-based file manager, for browsing projects. It has a pretty convenient text preview. I also like tig for this sort of thing.

I use it for updating my system. (Though you might consider that some form of scripting.)

And of course, there are all kinds of small utilities that don't have gui versions, at least on Linux.

Other than scripting would be...

Fixing OSes that are broken out of the box, like most GNU/Linux distributions.

compilers, text editors, media encoders, music players, batch processing tools, system information and monitoring tools, etc, etc
really, i run as much if not more individual programs in the terminal than graphically

i don't have any tektronix graphics scripts on hand to show off
also, they won't look fancy, as xterm doesn't try to emulate the look of the original storage tube (glowing green beam)
that and you'd need to limit the speed of drawing a lot to even see anything but the final image, the reason draws so slow is because it's being handed drawing commands over a slow serial link

in other words it emulates it but doesn't really

it emulates it so you can run tektronix programs and see their output, but it doesn't simulate a storage tube
just like most "regular" VTxxx terminal emulators don't simulate a monochrome CRT's appearance

Midnight Commander and Ranger are comfy as fuck file managers. When you just quickly want to look for your e-mail Alpine is great, also Newsbeuter for feeds.

I use it for package management because it's quicker than using GUI frontends since I have a pretty good grasp on using the command line version. I use it for CMus which is a really good CLI music player because everything else is clunky with too many buttons and bunch of wasted space in the UI. I also edit files using nano, and for remote connections to other machines on my LAN I use SSH. I use SSH not only for file transfer like backups and pictures but also for compiling large programs on my main PC when I'm doing work in my office on my laptop, because fuck leaving my comfy chair and fuck compiling big programs on a 2GHz dual core laptop. The terminal is also a great fallback tool to help you fix stuff if something breaks or isn't responding, like when I test software and it freezes and I can't use graphical window buttons to kill it.

I have always had so many problems with GUI frontends for packages I don't even bother to try them anymore. CLI installs just werk and save a lot of time.
