Regarding 16:10, those are nice but hard to find and way too expensive for what they offer. You can buy many 16:9 displays for 1 16:10 display. It's just not worth it.
And if you think about it, 27/16 = 1.687 which is pretty close to 16:10 = 1.6
Best displays have a ratio close to golden ratio. It's the most aesthetically pleasing ratio and is found in nature (including human body as well).
4:3 is just fool-thier though. it's ugly and looks wrong.

One single large 21:9 monitor is the ultimate programming productivity setup. You have have at least 3 good sized square windows (say, code, terminal, and browser), and can adjust the width of the windows as you please. 3 vertical monitors are nice but the screen edges are a constraint and having all that vertical space isn't all that necessary. Sometimes you need a window larger or smaller than the width of the monitor.
