Mumble, never have to deal with dropped calls or outages. Every one of my friends just joins the server when they're available/want to talk. Plus if there's too many people or if groups are discussing something different they can easily move to another channel.

I've been using Jitsi with good results (third on excellent)

riot is by far the best and offers pretty much everything Skype and discord do but FOSS and better
