I have a low bar squat of around 405x5 but I look like even more DYEL than when I started upperbody-wise

Also 405 lbs is only about 1.5x my bodyweight

For SS you should be doing 5x3
If you need to do upper body then nows the time to add in your own exercises for that.
Whats your bench and OHP, and how many calories are you getting per day?

I'm not a retard who fell for memes. I did SS + auxiliaries when I was a beginner. I did a moderate cut then ramped it up half way through then lean bulked until I reached intermemediate level

You shouldve done the SS with a little calorie surplus (surplus of the norm, not your personal regular intake) for about 2 months, then depending on your physique you shouldve bulked for a few months and then cut.
Youve made it more complicated than it needs to be

If you are skinnyfat when you start imo it's better to cut depending on bodyfat%

That's what memelords like Kinobody advise as well since you can look pretty cut in 3 months and then leanbulk from there but if you bulk hard from the get-go you'll look like absolute shit for a long time until you eventually cut

Manboobs would surprise me since I have pretty low bodyfat (1m90, 85 kg) but pecs would also surpise me greatly
