Eh, I guess. Grammar difficulty is about the same, but pronunciation is a lot harder for an anglo, so it should be fun.
Norwegian is the best Nordic language to learn, and it's extremely simple as well.
Swedish/Danish/etc. are okay too but Norwegian lets you understand more of the other languages than vice versa. You want to learn the Bokmal variant.

I always found it weird that in Spanish "milk" is female, although it sort of makes sense, I guess. German also has the famous neutral word for girl instead of the feminine.

I do want to keep /lang/ going but they always tend do die really quickly. On topic though I want to learn a language but I can't think of one. I like Japanese but it's pretty hard. Ideally it'd be one that I use a decent amount but Australia isn't really close to any non-Anglo countries

You could learn Vietnamese. It already uses Latin letters (pronounced in a French manner?). The downsides are that tones can be tricky and it's relatively irrelevant and therefore there are less good resources to help you learn (but I suppose that goes with any non-major language).

I've studied Southern Vietnamese for a while. The tones are extremely difficult to get down because the speakers are not used to foreign accents at all. Each word has 6 different meanings depending on the tone. Grammar is very simple though.
I grew up semi bilingual with Spanish and English, but broke contact with my Spanish speaking parent at age 16, and my ability to speak the language deteriorated before I had the chance to really master it.

Technically speaking, having a different tone makes it a different word. They're not treated as the same word.
e.g. đào = peach, dao = knife, đạo = religion, đảo = island
But I get what you mean. The Latin letters plays tricks on how you interpret the language when you're a native English speaker. It's easy to forget the Chinese-like roots of Vietnamese.
