All email is stored in plaintext. even if the provider offers client side encryption, I'd be doubtful there wasn't some fuckery afoot. Simplest thing to do is to use PGP on your emails before sending them, and use Gmail or mail.ru or some other provider that's not likely to go out of business in the forseable future.

get your own domain, most hosters provide email service too. and you could also run your own SMTP server, although that's non-trivial.

Seriously, running your own mail server is a terrible idea. Allow me to list a few reasons.
RDNS. You need it, or you get blacklisted. That means you have to pay extra for "business class" internet at home and have a multiyear contract in lots of places.
SPF-DKIM. More pains in the ass that you have to set up to prove you aren't a spammer.
Bounce/complaint detection/handling.
Install ancient crufty shitty mail server software and spam filters.
Even after all this, your mail still won't be delivered on certain domains. You can farm out the outgoing mail to AWS and they'll take care of it for 10cents per 1000, but then there's that botnet again, isn't it?

Only after 24 hours. The sending server will try it multiple times in between.
You need to have an outgoing mail relay / smarthost. Your emails are unencrypted anyway it doesn't really matter if there is another service in between who forwards them.
