Is it worth recording at 240 fps to later convert it to 60fps (non-slow mo)? Vs just recording at 60fps from the get go.

If you play a 240p video at 60fps yes. Otherwise the monitor gets 240 fps and randomly picks out a frame at 60Hz

depends on the camera and software but probably not
record at 60fps with 1/120 exposure

no, they capture 240fps and you can play it back at any speed using software
OP, you want fps to match your monitors HZ ideally.
so, 240fps video -> 240hz monitor
