Because the production is amazing. Regardless of technical wizardry such as the album actually being mono despite sounding so rich, it just sounds amazing and has a great vision of instrumentation and vocalization behind it.
It's turning 50 on monday and in many ways the album is still unmatched and ahead of the times.

Plus Brian's ingenious method of arranging and pairing instruments is brilliant in its own right; so brilliant it doesn't overshadow the actual strength of the songs themselves like Sgt. Pepper does.
