I think I fucked up. I can't access my files.
ls: cannot access '/home/user': Permission denied

Rebooted into windows and thankfully I can still access my files there. I'm going to try setting my C:\Users folder to shared to try and fix the permission problem. I can't find anybody else that had my problem online.

Both su and sudo has nothing to do with Linux. su is part of unix and other posix operating systems. Implementation of su used in most linux based operating systems is part of gnu coreutils. And sudo is a totally an independent program.
About the usage of "sudo su", I don't see anything wrong with it. su will let you switch to another user with their password and sudo will let you run a command as another user with you own password. So sudo su will let you switch to root with your password. On a single user machine, it's pretty common to use password less sudo, so sudo su is actually pretty useful and quick way to switch to root.
