Personally if I were designing one I would create just a basic anatomical model with appropriately flexible joints and tracking reference points for mixed reality. Mechanical dolls are as you say, a bit too complex to imagine in the near future. And by using mixed reality it would be vastly easier to add things like facial expressions/blinking, make customisation easier and cut cost drastically; Granted, it wouldn't move and as a result by many definitions not meet the classification of sex bot, but I think it would be the next best thing.

The more I think about it, the more I like and become terrified by this idea. On one side, your sex doll could literally be your computer. This means you don't have to worry about having multiple devices and there's no syncing information and companies hoarding your data. You just buy a doll from a company and basically bring your computer to life, and we could have open source software used to control the dolls.
On the other hand, your computer becomes a walking and talking robot and roams around your house in a human like body, almost like five nights at freddys. That would be a frightening thing to think about, especially if your PC got compromised by run of the mill problems, or if some javascript exploit occurred while you were doing something simple, like asking sexbot for instructions on how to make soup.
