I feel the same way. I also have Signal but it's not easy to convince people to switch from an app they know to one they don't. Most people I know use fb messenger exclusively and are not interested in switching, in fact they keep trying to concinve me to switch back to that pile of dogshit.

Is really nobody concerned that Telegram has the encryption keys in the first place? Whether they admit they hand them over or not is just a minor detail.

But that comparison is shit. How can you say that an application does not collect user data if it is closed source so you can't really tell? Also is says Riot (actually Matrix) has closed source server even though that's false. Plus there is no mention of XMPP.

It's comparing messaging software, not protocols. Riot.im is basically a test app and test server for Matrix. They use their own servers and will soon have a form of paid hosting. The protocol is open source, their server is not on github. XMPP is also merely a protocol to which there are client apps but most use their own server. Conversations has a paid server model, for example, and selects their server as default.

If it's closed source and unregistered, the assumption is that it does collect data. If it's owned by a company they'd have to disclose what data is being collected and when. In addition, you can always make a network analysis of what's being sent over the app.

The guy who reviews these only takes into count the default options. Out of the box, it doesn't have enabled encryption and such things. It's also a very new protocol and it's security hasn't yet been confirmed. They even state themselves that encryption is experimental and shouldn't be 100% trusted.

Why is Jabber (XMPP) with OTR not on this list?

You can use it for free. They said "paid services will come soon" but this will only mean that you'll be able to host more GB on the room you make after they make an official limit. I'm not aware of any file limits or user limits right now. They still don't have too many users for server costs to be huge, so I don't expect them to charge for big rooms for a while.

As it's said before, it's somewhat safe and private. Encryption is not enabled by default so you'll have to manually enable it when you make a room. Telemetry is enabled by default on the app so you'll have to disable it (it only gathers some device info and performance info, like most other apps do). But Riot themselves say that the encryption is still experimental. Matrix is still a very new protocol.
You can always host your own server if they start charging for large rooms. There's a detailed guide that will tell you everything you need to know if you want to make a Matrix server compatible with the Riot.im.
An alternative is Wire messenger. They have completely free 1-1 and group chats, but also have a paid option for a Team Server. "Team Server" is basically the same as discord, you can manage roles and have a slightly different interface for handling files as well as a few other features (like bots, backups/archiving, and soon self-hosting) that the regular group chats lack. But it's a fairly secure platform.

The problem is that Wire is kinda pricey for a new business. 6 euros a moth per user.
