I don't know why this is but I have a hard time enjoying albums with monochrome covers. When I listen to music, the artwork is a big part of how the album sounds to me. Really flashy artwork tends to sound more "colorful" too, and in the same way black and white artwork makes it harder for me to get interested in it while listening to it.

Which is why I can't really get into post punk I suppose, the music sounds incredibly black and white to me, although I'm not sure if it's just because so much post punk artwork is black and white.

Album covers do grab my interest, but I don't think they actually ruin my impression of an album if they're lacking in color. Can't say I share your issue.

Perhaps you should stare at a fruit basket while listening to those albums. :^)

I know what you're saying. Albums with more vibrant and earthy album covers like Miles Davis' Agharta will usually sound colorful to me. If Agharta had a much darker album cover, I probably would not make the same connections.
