But honestly I'd just read some chess.com articles and practice. Try out some openings and stuff that you like. At low rating you only really need to learn a few openings.
Also don't get discouraged if you do shit in online play. Most of the people playing online have played for years and so it's not a fair representation, you'll probably be a lot higher irl

I'm seriously thinking about adopting the QGD as black. I don't have a proper opening as black against d4, except the Stonewall Dutch, which used to work just fine when I was at a lower rating, but every since I've climbed (I'm now a bit shy of 1700 on chess.com) it just doesn't seem to work anymore, so I feel like I need to adopt a real non-meme defense. I like closed positional play where there isn't too much theory and I can just reach a normal middlegame, and the QGD seems incredibly solid for that. However, it also seems maybe too drawish. After all, I still want to enjoy playing, I don't want to have a snoozefest everytime my opponent plays d4. So should I adopt something different then? Maybe the Chebanenko Slav (1.d4 d5 2.c4 c6 3.Nf3 Nf6 4.Nc3 a6)? Or is the QGD still more fun to play than what I'm giving it credit for?

chebanenko slav leads to some wild games. If as you say you don't want a snorefest I'd say give it a crack and learn some lines. You're clearly up on your stuff, queens gambit declined will still be there for you if your adventure comes up short.
