In the U.S. the fedeeal minimum wage for servers isn't $5 an hour, it's $2.13 per hour and the employer is absolutely not obligated to make up any difference but the server is obligated to pay taxes on normal minimum wage whether they made it or not.

Other restaurants, such as the one I work at, require you to know just about every ingredient of every dish, know how to make just about any cocktail imaginable, be able to suggest a wine pairing for just about any of our 50+ wines (and be able to describe the wines perfectly), and be able to do all this in a small amount of time.

It's not rocket science by any means, but it is hard work and you have to know a lot.
