It's complicated.
1. This zone was ignored by the spanish because no gold and stone age tier natives until the Portugese built Colonia del Sacramento in 1684.
2. The Spanish in Buenos Aires got nervous about the portugese cucking them the Banda Oriental so they built the fortress/port of Montevideo in 1724.
3. After a gorillion wars and swapping, the Banda Oriental became Spanish.
4. Ironically we revolted in the independence wars just a mere decades after the had managed to finally push the portugese out.
5. Portugal had always wanted these lands because they were strategic for the Rio de la Plata Basin and considered the Uruguay and de la Plata rivers Brazil's natural south border.
6. After the spanish were beaten here the revolutionaries fragmented between the Federals under Artigas and the Unitarians under the Triunvirate in Buenos Aires. Just to cuck Artigas the Unitarians promised they would not intervene if the portugese attacked and annexed the Banda Oriental, since it was Artigas base.
7. Forced to fight a two front war Artigas was rekt and we were annexed by the portugese empire again as the Cisplatine Province.
8. Independence war of Brazil, we became a part of Brazil
9. Buenos Aires always considered us their rightful clay so the started plotting an invasion and revolution to re-annex us.
10. This culminated in the Thirty-Three orientals and the Cisplatine War.
11. While the platineans were superior at land, the Brazilians managed to win the seas and imposed a crippling blockade on Buenos Aires.
12. With no side being able to really win, through UK mediation, the british proposed a solution that weakened both countries and gave them an ally in the south atlantic. So a buffer state was created.
So that's it, a literal non-country born out of an accident. It's impressive that after 200 years we still exist.

So was there a majority of Spanish or Portuguese in Uruguay during the late XIX c. revolt? Looks like the land was owned by Portugal for much longer than Spain so I'd expect majority Portuguese. Why did you switch to Spanish then?

Montevideo, the spanish city, soon replaced Colonia del Sacramento, the portugese city, as the center of the province so by the XIX century there was a clear spanish majority even though the portugese came earlier and had us for more time.
The north remained portugese though, but the portugese-speaking lands were given to Brazil in the border treaty of 1851 where we were also given the spanish-speaking parts.
To this day however, portugese is still common in the north, and in the city of Rivera people speak the abomination that is portuñol/portunhol.
