Yeah but they like make the shit sound good and put the stuff together but it's really overrated nowadays

Back then you had to know about physics and stuff to be a sound technician/producer but nowadays the gear quality and stuff is so advanced that they're nearly obsolete, I guess

It's paying someone to make the sound quality good, and to add effects, so you don't have the shitty, low-fidelity sound of artists like Daniel Johnston or Neutral Milk Hotel. Having your album be produced by Phil Spector or Brian Wilson would improve the quality massively.

They oversee the project and guide it along from start to finish. They'll often take up rolls as manager, arranger, or engineer; they might hire/pay session musicians and engineers or they could schedule lessons for singers with vocal coaches.

They do whatever they have to do to make sure the project gets finished and sounds good. Depending on their style of producing, they might have a hand artistically in the songwriting.

No, that's the engineer, and they're needed too because there's a lot more advances technical know-how involved in making a professional sounding recording than you seem to believe.
The producer guides the direction of the project and gives advice and suggestions. It's an outside creative force that keeps the juices flowing, helps the band try harder, and filters out the bad ideas. Of course they also guide the sound of the final mix, choosing effects and guiding the sound of the track. They also sometimes perform additional instrumentation.
Of course the band gets a say in all those things too usually, and some artists are perfectly competent at producing themselves, but it's an option if a band wants someone to help them hone their skills.
The Beatles without George Martin or Talking Heads' Remain in Light without Brian Eno would be totally different.
Also compare how sloppy Weezer are on their demo tape compared to their Ric Ocasek-produced first album just a year or so later.
