why doesn't the last text line on the first card just say creature gains lifelink?

I've been away from mtg for awhile a little fuzzy on the rules.

Because it is functionally different. It creates a trigger, so you would gain the life after the creature deals damage, but not before you died from it if it was enough to kill you. or you could put it on your opponent's creature and you would gain the life instead of them.
