Italian ticks all the boxes. All the others have to completely disregard the former to achieve the latter two.
Italian > Japanese > French >= Indian
Jap is like Italian but more laborious. French is THE meme cuisine, overly complex and fancy, for an end result no better than the former two. Indian is really tasty but uses 5 billion spices and various shit (however the actual making of it is usually rather simple)

Indian/Pakistani have been my favorite for a while. Decent amounts of vegetables and protein with some rice is awesome. Curries are very diverse, great spices desu.
Tikka masala and saag curries my favorite.
