I guess I'd call most of those "pork belly", but I have seen the others labeled "Country Bacon" before.
It's all good sliced thick for breakfast, but second from top, sliced thin and fried till crispy is the best for a sandwich, because it breaks instead of pulling out of the sandwich when you take a bite. The others are too durable for a good BLT.
