Pizza wise, i would probably have to go with mozzerella, although i might have to try it with provolone sometime.

right on, domino's' brooklyn style has half the usual mozzarella and does the other half and a little extra with provolone on a thinner crust. it's not too bad imo

It depends on the type of pizza really. Not just thick or thin but the type of dough and how it was cooked.
Your pic appears to be wood fired, damn good pizza. Id think 70% FRESH mozzarella 20 % provolone and 5% asiago 5 % parmesan would be good on that.
Some pizzas a higher provolone content and avoiding sharp cheeses is best.
