They're as white as Syrians and Turks.
Then again, that's just Athens. Northern Greece is quite white, but northern Greece is altogether less Greece. Macedonians couldn't qualify in the ancient Olympics because they weren't considered Greek, but Barbarians. The only reason Alexander's Empire became Greek is because he had Athenian and Southern Greek generals and armies. Macedonia was considered Greek-ish, and not properly Greek.

It's the other way around, actually. Ancient Greece didn't include the white parts (Macedonia, Thrace and Epirus) that make it altogether whiter today.
