Not to emulate last nights chicanery, but TOS did not have all of those aspects.

TOS felt new to Omnicolor viewers of the late 1960s and sci-fi fans in general.
Character continuity was limited really to the big three (the only three, really, in terms of billing).
I really don't know what you mean by anthology feel.
Voyager's driving premise was ever present except for in a few episodes, particularly Seasons 4-6.
But it most certainly had a pioneering adventure feel and a "badass" captain but I felt Kirk was the ideal Starfleet captain. He had pieces of Picard, Sisko and even Janeway and Archer (albeit limited). I just hated when he had to act insane or nuts. Shat' was too much for me in those scenes.

BUT, don't send him flowers yet (to quote BLT).. it's CBS after-all and overseeing executives have gotten their hands dirty many times in the past. And a man's Trek-record (*ahem*) isn't enough to let me think he won't screw something up.

I am OP, I am on season 5 of my second watch of DS9 and I am in pain.
I love this show. I mean, I'll get through Enterprise again after this, the TOS movies (which will also hurt when they're over) and my personal TNG favorites...
And I will try Voyager again but know I'll never make it very far. I just hate it, it's stupid.
But after it's all over I'm at a loss for Spacekino until I'm ready for my next run of the series next year after the new show concludes its first brief season.

There's always B5 and Farscape

Farscape is very weird after watching Trek.
It's like that famous quote about Shakespeare, "he writes what could never happen, yet if it could, the characters would react exactly as he imagined", except totally reversed with nobody acting as one would expect them to in any given situation.

I enjoy what I've seen and I'm looking forward to watching more, but it gives the impression that Australians have some fundamental difference in thought and action from the rest of the world

Gonna have to add that one to the pasta. I'm thinking about cultivating it into a seven season synopsis, or aping a Memory Alpha/Wikipedia article.
After all, I'm living with the knowledge that I will NEVER watch the episode where Dukat discovers false evidence planted by Kira implicating that he isn't Ziyal's father and afterwards attempts to seduce her before Damar blows open the ruse.

Don't forget the one where Ziyal finds an encrypted holoprogram of her mother hidden in the ship's computer. Ziyal keeps it a secret from the others, but she visits her holomother every day to talk about her life, ask for advice, and get some of that motherly love that she's missed so much. Then Kira finds out and reveals that it's another of Dukat's porn programs.

One thing to consider is how Kira joining the Naprem would actually effect the ensuing events. In the show, the whole time she is on DS9 Dukat is doing hit-and-run attacks against the Klingons to fair success, but he gets fed up and invites the Dominion into the AQ, which sets in motion the next 3 seasons of events.
With Kira looking over his shoulder and advising him tactically, he would probably not end up doing such a thing and you would see a continual Klingon presence, putting Klingon/Fed relations in a worsening position

Why does Star Trek have to have so many useless and irrelevant characters?

Second time around on Voyager, and he's a good actor, which makes all the difference.

His character was the ship's "WOW that's an AYYlien" alien. But in the end, his character really evolved in a proper way, similar to Nog's character. He really gets a bad rap.
