Ark: Survival evolved is a pretty nice one, I really recommend it if you go on unnofficial server, official server tend to be really slow and you may have a life.

Tried Rust, its a great game, but not my cup of tea imo but you may like it if you love survival when you die one-shot.

Stardew Valley is nice if you want a relaxing singleplayer experience, pretty much a mix between harvest moon and rune factory.

The forest is fun, not really a story, its an horror survival game, pretty scary and a lot of stuff to discover in it.

Dont starve is nice too, but you have to love the genre.

Binding of Isaac, a classic.

I am mostly into survival/sandbox so I may not be the best at suggesting stuff.

But those are pretty nice game overall, you do your own story.
