Battered fired cod and a potato scallop. Fish n chips friday after all.

Vorbereitung: 600 g Schweinefilet parieren. Kette, Filetkopf und Filetspitzen in Geschnetzeltes verwandeln und einfrieren. Aus dem Rest Medallions schneiden.

Die Medallions auf jeder Seite 2-3 Min. scharf anbraten. Danach beidseitig mit Salz und schwarzem Pfeffer würzen. Die Medallions mit dem Goldmuskateller ablöschen und den Wein fast verdunsten lassen. Gemüsebrühe und etwas Schlagsahne dazugeben. Mit Salz Pfeffer und Thymian würzen. Etwas Soßenbinder mit warmem Wasser in einer Tasse anrühren und damit die Soße leicht eindicken.

Knopfspätzle:
400 g doppeltgriffiges Mehl
8 Eier
1 Prise Salz
frisch gemahlener schwarzer Pfeffer
etwas frisch gemahlene Muskatnuss
1 EL Olivenöl
2 EL abgekühlte, geschmolzene Butter

Teig anrühren bis er homogen ist und Blasen wirft. Dann mit dem Spätzlehobel und kochendem Salzwasser Spätzle machen. Die fertigen Spätzle in etwas geschmolzener Butter wenden.
