let your steak come to room temp unwrapped, but cover with a dry dishtowel. the oil is spitting because of water from the meat. if you let it come to room temp some of the water will evaporate, but it's always going to do that a bit
also make sure you have the oil hot enough or you will boil the meat rather than searing it
