Because Eastern martial arts are represented in judo and taekwondo, while Western are represented in boxing, wrestling, and fencing. Kendo isn't seen as necessary to include.

This is the problem. I practice Kendo and shit like that makes unbiased scoring virtually impossible. Zanshin is the state of your mind after a hit and how do you objectively measure that? How would a computer measure that? You could wear suits like in fencing that detect hits but with the current enforced style of fighting it is impossible. It's a long story but the Kendo Federation has ruined this art by turning it into a ceremony where protocol weighs more than actual combat skills. Everyone has to fight with the same style, although the tradition of Kendo offers numerous different ones.
Kendo in its current state is not suitable for the Olympics where you can measure success/points/hits without bias.
