For an all-around media player VLC is probably the best.

I use Musicbee. It's really easy to use and simple, and it gets the job done. It looks the best too.

I've been using WinAmp recently. If you care about how your media players look then this one is shite but it's pretty simply organized for me.

Mplayer OSX Extended. For mac, much better than VLC.

MusicBee is perfect for me. I only changed the skin - the rest of the layout was spot on. List of artists down the side, with band pictures, and you can click on them to get a nice view of all of their albums with cover art. Nice simple podcast subscription system as well. I'm pissed off that I only decided to download it a few months ago - I'd been using foobar but I don't see what you could program foobar to do that MusicBee doesn't already do.
