Traditionally, you want to break up the action into short, choppy sentences, to match the pacing of the fight itself. Keep your descriptions loose, so that your director can interpret them how he wants, and try not to take up too much space with them in the script.
Example:
>PEPE and WOJAK are glaring at each other, each bruised and bloodied beyond belief.
>Wojak throws a punch. Pepe dodges, lands a blow on Wojak's ribcage. Wojak staggers, then knees Pepe in the face.
>Pepe lurches back in pain. Another blow, to the stomach. Pepe jumps back, kicks into Wojak's knee. Wojak topples to the floor, and Pepe lands a final roundhouse to Wojak's face.
