It would have been more subtle if the show paused, DnD appeared on screen and explained that last episode, Euron came back and began construction of a thousand ships, which are the 1000 ships Dany was talking about.

Listen, this is an entirely subjective question and you're going to get a dozen varying answers.

If you like the first two seasons of the show, then yes you should read the books as they compliment each other almost perfectly. From there, the third book is my personal favorite and then in the last two there is a noticeable dip in quality from GRRM but they're still way better than what the show devolves into.

Its a Jorah Connington kind of thing I'm guessing. They merged Benjen and Coldhands for the show but they're separate entities in the books

It was a good speech, and it really made me appreciate how the actor turned from his usual bumbling to a pretty dramatic cry.

I don't think the cheer was needed, since the speech's goal was to make sure the soldiers know what they have to do (and that is, fight against their own Faith).

Grandma Redwynne was unneeded in that scene, though. They are really trying to make he into less of a footnote character, but for what?

Anyone else not really trusting Benjen at the moment? It seems awfully convenient that he managed to show up to save them, not to mention him insisting that Bran go south of the Wall which would allow the WWs to cross. And why didn't the COTF ever tell Bran about him? Seems fishy to me. Of course, I might be putting too much faith in the writers and they'll just play him straight.
