same reason most actors play kind of the same range of character every time... always seem to do 'themselves'
it's because they themselves, their presence, look, voice, etc, is what they're providing. films are aesthetic after all, audio-visual.
some actors can be unusually elastic, but generally the more distinct, famous ones are picked because their distinct 'thing' - their whole persona/aesthetic/energy/idea - is the right material with which to paint the desired character.

leads generally 'do themselves' too (and Wilson is actually sometimes a lead, if not exactly a conventional one), though, Di Caprio, Pacino, Keanu, etc
it's just some leads are bland by nature so 'themselves' is incredibly generic even if it's consistent

Some do. I've met a few people who write scripts with certain actors in mind, which I assume is a fairly bad thing to do considering how that further specializes the script and makes it useless to anyone who can't get said actors.

He can do "regular guy" well but "chilled out dude" is a hard role to find people with natural charisma for it, so it's an easy gig for him to secure
