Which means the events of First Contact won't happen, or if they do, will play out differently. Which means the past should be substantially different as well.

Basically what you're asking, is why this new timeline is still the way it "should be".
There are 3 possible answers to this:
1) If an alteration to the past occured, it doesn't need to "occur again" in order for it to be present. Until it's overwritten by a different time traveller, it is written in stone.

Might be an intentional response to complaints about the second movie being a shitty Wrath of Khan, as well as a desire to distance itself from Abrams' movies in general and show us that Trek can still be Trek. Plus, I actually am pretty excited to see a whole new crew. But then, I prefer TOS over any other Star Trek, so if the show is how I like it, a lot of other fans may not like it as much.

Actually it says "new Crews", plural, so there's a chance that it actually won't be about one specific ship, but possibly a fleet. (It could also just mean a new time period, or location where we meet other crews temporarily, but just pointing it out.)
As for the visuals getting an upgrade:
That's my issue, it feels less like a visual upgrade and more like something out of a game, or a Doctor Who opening. Way too vibrant and almost cartoony.
