All I have is the 4 years of high school German and whatever I pick up from skimming through /deutsch/. How do I get her off to a good start and not overwhelm her?

/deutsch/ is useful for asking questions as someone will always be friendly enough to answer and basic grammar structures and words. Though its also full of memes and things that will make you look like an autist is ever said in public. So be careful what you pick up.
